It all starts at Hacienda Patrón, located in Jalisco, where Agave Azul Weber is grown. The care and selection of the plants are essential to achieve the desired quality in the final product.
The expert Jimadores, with their trained eye, select the plants at their best moment, when they have reached their point of maximum maturity, around eight years of age.
The winemaking process: from harvesting to fermentation.
Once the plant is harvested, it is cleaned with the help of a Coa. The heart of the Agave or “Pineapple”, is baked in brick ovens in a homogeneous way, to achieve its perfect cooking.
The cooked pineapples are then crushed by a two-ton volcanic stone crushing wheel, which extracts the juice from the plant, which is then fermented for 72 hours.
Fermentation is a key process in the production of Patrón Añejo Tequila, since the flavor and aroma of the final product depend to a great extent on it.
The tequila is then distilled and, depending on the version, bottled or aged in handcrafted oak barrels. The minimum aging time is 12 months for Patrón Añejo, the distillery’s most aged tequila.
