What is the production process used?
Production is carried out in an artisanal manner. From the harvesting of the maguey and transportation to the stone ovens, to the creation of ovens and the process of maguey grinding, packaging and labeling. In addition, the 1.5 cm jima is cut, keeping only the heart of the maguey, and cooked in traditional volcanic stone ovens with holm oak wood, which gives the mezcal its characteristic smoky flavor.
