What is Alipus San Andres Mezcal?
Alipus San Andres Mezcal is a young artisanal mezcal made by Alipus & Danzantes in Mexico.
It is a social impact project that aims to promote traditional producers from different regions and their terroirs.
It is an alternative project, supported by Destilería Los Danzantes, with the idea of mapping Oaxaca through the different expressions of its mezcals, which are differentiated from each other by the conditions where they are produced, the soil, the water, and the climate of each one, that is, the terroir.
How is it prepared?
Mezcal Alipus San Andres is baked in a wood-fired, conical oven made of pebble stone. It is ground in a Chilean horse-drawn mill and fermented in cylindrical vats made of sabino wood. Double distillation is discontinuous in copper stills.
What are the tasting notes like?
Mezcal Alipus San Andres is transparent with notes of cooked maguey, caramel and white flowers.
In flavor it has notes of wood, good acidity and medium persistence in the mouth.
It is distinguished by aromas with a start of almonds and a very floral accent until reaching the scent of citrus peel. In taste, the almond flavor is presented at first and then the citrus and sweet flavors of ripe fruits.

The agave variety is 90% Espadín (Angustifolia Haw) and 10% Bicuishe (Karwinski).
